Fish - Cod "plaki" - cooked in the oven inside tomato sauce. Yummy!! ^_^
For anyone wondering what's this & how to cook it:
Dump diced tomatoes (fresh summer mature ones or/and concasse ones), parsley, onion, spring onions, lots of garlic cloves, along with olive oil & some water (and the necessary spices & herbs of course) in a pan, put in the oven in medium heat for about an hour, remove from the oven, put the fish in, covering with some of the sauce, and cook again in the oven in medium-high heat for 15 minutes.
That's it! Enjoy along with country bread, or rice, or pasta/noodles, whatever you prefer! :)
