I made homemade ham for the first time! My friend's mom, who used to sell ham during Christmas, taught me. Had fun making it and so relieved it turned out well. 

Since it's the weekend, I'm having a burger and some fries!

With it being Memorial Weekend here, we’re having turkey burgers tomorrow with sweet potato fries.  A lot of people’s cookouts are being rained and hailed out today with storms across the state.

I made homemade ham for the first time! My friend's mom, who used to sell ham during Christmas, taught me. Had fun making it and so relieved it turned out well.

Injected ham with a curing marinade, cured it in the fridge for five days, then boiled it in a mixture of pineapple juice, beer and spices.  It was easier than I thought!

Had some hamburger buns left over so I made Black Bean Burgers today.  

Last week was the usual lentils or beans, rotating starches-brown rice, sweet potatoes, pasta, and rotating veggies or in combo-carrots, kale, collard greens, onion, mushrooms, celery, tomatoes, and asparagus.

So this weekend we shook it up and had pizza at a new place where they make their own dough.  They also make homemade ice cream, but that would have been too much dairy for one day! XD

I adapted the recipe below for our tastes.  White Bean Fettucine Alfredo

I used freshly cooked beans instead of canned.  In place of the parsley I used fresh basil and increased the amount of spinach.   I also topped with finely chopped walnuts and finely sliced grape tomatoes.
